Sec. 9-311 Grease Interceptor Criteria.
   a.   Users who are required to pass water through the grease interceptor shall follow this criteria:
      1.   Location of Interceptors
         All grease interceptors shall be located outside of the building in such a manner that personnel from the Town of Schererville can inspect the Interceptors from time to time and can be maintained.
      2.   Size of Interceptors
   b.   All grease interceptors shall be sized to insure that the Town of Schererville sanitary sewer collection system is protected from excessive grease which may cause clogging or damage and that the facility is capable of meeting all discharge requirements.
      1.   Establishments which provide eat-in services that do not sue a commercial dishwasher shall utilize the following formula to determine the minimum size interceptor required. The Town of Schererville may require the establishment to utilize a larger interceptor than the minimum.
         a.   Twelve (12) hour operation or less
            Seating capacity times (x) seven (7) gallons equals (=) minimum size of interceptor.
         b.   Over twelve (12) hour operation
            Seating capacity times (x) seven (7) gallons times (x) two (2) equals (=) minimum size of interceptor.
      2.   Establishments which provide eat-in services and utilize a commercial dishwasher shall utilize the following formula to determine the minimum size interceptor required. The Town of Schererville may require the establishment to utilize a larger interceptor than the minimum.
         a.   Twelve (12) hour operation or less
            Seating capacity times (x) nine(9) gallons equals minimum size of interceptor
         b.   Over twelve (I 2) hour operation
            Seating capacity times (x) nine (9) gallons times (x) two (2) equals minimum size of interceptor
      3.   Establishments that provide take-out service only but does not use a commercial dishwasher shall meet the requirements found in Section B,l of this policy except peak hour meals served shall be utilized in lieu of seating capacity.
      4.   Establishments that provide take-out service only and utilizes a commercial dishwasher shall meet the requirements found in Section B,2 of this policy except peak hour meals served shall be utilized in lieu of seating capacity.
      5.   The Town of Schererville shall be notified of any changes in operation or process prior to any change whereby the establishment may be required to upgrade their interceptor.
   c.    Sampling Port Required.
      A sampling port shall be installed in an approved location to allow sampling by the Town of Schererville and the user.
   d.   Issuance of Permit for Installation of Interceptor
      The following shall be submitted to the Town of Schererville for review and approval prior to the issuance of a permit for installation of an interceptor. Any changes to the approved plan shall be pre-approved by the Superintendent prior to the changes being implemented.
      1.   A site plan showing the location of the interceptor, lines, and clean-out or manhole
      2.   Details of the interceptor, lines, and clean-out manhole
      3.   Formula and calculations used to determine the interceptor capacity
   e.   Existing Interceptors
      All interceptors currently in use or in existence at the time of this ordinance will be considered sized sufficiently unless analyses performed on the discharge shows that the user is in violation of the aforementioned standard for FOG concentrations. All new interceptors or interceptors to replace or upgrade existing interceptors will be required to meet all criteria as stated under this ordinance.
      Establishments with existing interceptors are still required to meet all discharge requirements as stated under this ordinance and Ordinance 1224 of the Town of Schererville.
   f.   Exceptions.
      Under certain circumstances the interceptor size and location may need special exceptions from this ordinance. If an exception to this ordinance is requested, the user must demonstrate that the size and location will not cause the sanitary sewage collection system or the Wastewater Treatment Plant any problems in meeting the discharge requirements of this ordinance or Ordinance 1224 of the Town of Schererville.
