(a) Every facility having a grease interceptor shall maintain an Annual Interceptor Maintenance Log indicating each pumping for the previous twelve months. Each facility shall maintain the annual log for a period of five years. This log shall include the date, time, amount pumped, hauler and disposal site, initials of individual recording the information, and shall be kept in a conspicuous location on the premises of the facility for inspection. Said log shall be made immediately available to any authorized inspector. The facility log will clearly denote to the log user that he or she is legally responsible for the information logged and that fraudulent information is a legal infraction by that user.
