All food service establishments and retail food stores shall maintain a contract with a licensed grease disposal company for the servicing and cleaning of grease interceptors and disposal of grease. Facilities using fryers or otherwise producing substantial quantities of grease during preparation and cooking processes, shall be required to obtain a grease disposal container from said disposal company. Disposal of grease into public sewers is prohibited.
