(A) The requirement that an applicant attend a course and pass an examination shall be waived if the applicant has been employed for three consecutive years as a food service manager or in a similar position of authority immediately preceding the effective date of this chapter, or if the applicant is a graduate of a two-year program in restaurant or hotel management approved by the Director. The Director shall approve such program only if he finds that the curriculum is sufficient to insure that the students are knowledgeable in safe food handling practices. An applicant must attend a course of training and pass an examination if repeated violations of the Health Code have occurred in the food establishment where the applicant has been in a position with authority to prevent or eliminate such violations.
(B) The Health Officer may deny an application for a food service manager's certification if the applicant knowingly makes any false, fraudulent, or unlawful statement on the application.
