§ 51.136 GENERAL GREASE TRAP/INTERCEPTOR REQUIREMENTS.
   (A)   Grease trap/interceptor design, sizing, and installation shall conform to the current edition of the Uniform Plumbing Code and shall be construed of impervious materials capable of withstanding abrupt and extreme changes in temperature.
   (B)   No grease trap/interceptor shall be installed under sinks. Location of the grease trap/interceptor must meet the approval of the City Engineer.
   (C)   At least one access manhole, with a minimum diameter of 24 inches shall be provided over each grease trap/interceptor chamber. Such access must be in an area accessible to city inspection staff at all times. The access manholes shall extend to at least the finished grade and be designed and maintained to prevent water inflow or infiltration. The manhole shall also have readily removable covers to facilitate inspection, grease removal, and wastewater sampling activities. Additional access manholes may be required to provide maintenance and inspection access to all portions of the grease trap.
   (D)   The user shall maintain a written record of inspection and maintenance for five years. All such records will be made available for on-site inspection by a representative of the city during all operating hours.
   (E)   All chemical and biological cleaning materials designed to liquefy grease for the intention of cleaning and degrading materials within grease traps/interceptors or associated conveyances are prohibited.
   (F)   Grease traps/interceptors shall be maintained by the user, at his or her expense, in efficient operating conditions by periodic removal of the accumulated grease. No such collected grease shall be introduced into any drainage piping or public or private sewer.
   (G)   Grease traps/interceptors in service prior to the POTW subchapters are not required to be modified unless the water has a process modification, significant changes in operation warrants modification or replacement, or the Wastewater Utility Manager deems the existing grease trap/interceptor ineffective and potentially detrimental to the POTW.
   (H)   The city maintains the right to access and clean any grease trap/interceptor as determined necessary by the city. The owner of such establishments shall be responsible for all costs associated with such access and cleaning and shall, upon notice, promptly reimburse the city for all costs.
