As used in this chapter, the following words and phrases, unless otherwise distinctly expressed in this chapter, or manifestly incompatible with the intent of a particular provision, shall be construed as follows:
(a) “Document of Certification” is an official statement from the proper officer of the Borough stating that the food service establishment is in compliance with the Borough's FOG Ordinance.
(b) “Food service establishment” means any commercial or public facility that prepares and/or serves food or beverages for sale or consumption.
(c) “FOG” includes, but is not limited to, all residual fats, oils and greases that are by-products from food service establishments. Some examples of FOG include but are not limited to lard & cooking oils, meat fats, mayonnaise and salad dressings, butter, ice cream and other dairy products, creams and sauces, baked goods, and food scraps.
(d) “Person” means any person, syndicate, associate, partnership, firm, corporation, institution, agency, authority, or any entity recognized by law as the subject of rights and duties.
