§ 111.041 FREQUENCY OF INSPECTION.
   The regulatory authority shall routinely inspect each food service establishment, retail food store, mobile food vendor and vending operation located in DeWitt County at a minimum frequency in accordance with the following schedule and shall make as many additional inspection as are necessary for the enforcement of this chapter.
   (A)   Category I: High Risk Facilities shall receive three inspection per calendar year. Dependent upon inspection performance and approval by the regulatory authority, employees involved in food operation may receive a Hazard Analysis Critical Control Point (HACCP) training exercise, in-service training, or attend an education conference on food safety in lieu of a third inspection.
   (B)   Category II: Medium Risk Facilities shall receive two inspections per calendar year. Dependent upon inspection performance and approval by the regulatory authority, the permit holder may request an in-service training for employees in lieu of a second inspection.
   (C)   Category III: Low Risk Facilities shall receive one inspection per calendar year.
