§ 115.054 FOOD HANDLING AND SERVING METHODS.
   All employees in such establishment and all persons handling or serving food therein are prohibited from handling butter intended to be used for foods in such places in a manner which causes their hands to come in contact therewith and from picking up glasses, cups or mixers with their fingers inserted therein, and from wiping dishes with soiled napkins or aprons or with napkins or aprons that were previously used for any purpose and not relaundered since last used. No bakery goods shall be exposed for the purpose of exhibiting same in such places unless adequately protected against insects of all kinds and contamination by dust or handling by patrons. Such places shall not be so dusted or swept that dust will settle on food that is exposed. Dry sweeping in such places is prohibited and, if indulged in, shall subject both the proprietor or manager and the employee who actually does the sweeping to the penalty herein prescribed.
