922.21 ENFORCEMENT; PURPOSE AND SCOPE.
   (a)   The City of Aurora finds that specific enforcement provisions must be adopted to govern discharges to the City's system by Food Service Establishments to ensure that the municipal sewer facilities are protected and are able to operate with the highest degree of efficiency, and to protect the public health and environment.
   (b)   In general, the City will determine noncompliance with the provisions of this FOG Control Chapter through visual inspections, records, review, sampling, and/or monitoring of Food Service Establishments.
   (c)   When a Food Service Establishment is found to be in noncompliance with one or more of the provisions of this Chapter, the City will generally issue a written Notice of Violation (NOV) to the FSE. If the FSE fails to properly address the causes and/or sources of the noncompliance, then the City may pursue additional enforcement options.
