§ 89.02 MOBILE VENDOR REGULATIONS FOR COOKING OPERATIONS.
   89.02(A)   Extinguisher Requirements. All are required to have at least one class ABC extinguisher with a minimum of a 4A40BC rating, located within 30 feet of commercial type cooking equipment. The extinguisher shall be fully charged (gauge indicates full) and properly inspected and tagged by a certifying agency licensed within the State of Florida.
   89.02(A)(1)   For cooking operations utilizing open flame grill: All shall have a pressurized water extinguisher, located within 30 feet of commercial type cooking equipment, in addition to at least one ABC extinguisher, as described above. The pressurized water extinguisher shall be fully charged (gauge indicates full) and properly inspected and tagged by a certifying agency licensed within the State of Florida.
   89.02(A)(2)   For cooking operations that produce grease-laden vapors (fryers). All shall have a K Class extinguisher required for deep fat frying, located within 30 feet of commercial type cooking equipment, in addition to at least one ABC extinguisher, as described above. The K Class extinguisher shall be fully charged (gauge indicates full) and properly inspected and tagged by a certifying agency licensed within the State of Florida. In addition to the portable extinguishers listed above these shall have a commercial kitchen exhaust hood and duct system with an automatic fire extinguishing system, which shall be in compliance with the following:
      89.02(A)(2)(a) Proof of a compliant annual hood fire suppression system inspection report by a certifying agency licensed within the State of Florida.
      89.02(A)(2)(b) Fire suppression systems properly tagged.
      89.02(A)(2)(c) Proof of a six month recent hood cleaning report.
      89.02(A)(2)(d) Properly tagged indicating hood system has been cleaned.
      89.02(A)(2)(e) Automatic Fire Suppression System and components are in compliant working order.
   89.02(B)   Compressed Gas. LP/Propane cylinders, hose connections, and couplings used for appliances shall be in place on the day of the event for a visual inspection by a fire inspector. LP/Propane cylinders shall be properly secured and shall be located at a minimum of 10 feet from open flame cooking devices, trash, or combustible material.
   89.02(C)   Emergency Access. The placement of the concession operation shall not interfere with fire department access, and shall not obstruct or interfere with fire lanes, fire hydrants, fire department connections and exit access.
