Regularly scheduled maintenance of grease-handling facilities is required to ensure adequate operation. In the maintaining of these grease interceptors, the owner, lease-holder, or operator shall be responsible for the proper removal and disposal of grease by appropriate means and shall maintain on-site records of dates and means of disposal. Records shall be maintained for a period of three years.
