§ 52.55 DEFINITIONS.
   For purposes of this chapter, the following words and terms shall have the meanings prescribed:
   GREASE TRAP. A constructed device, and its appurtenance surfaces and working parts, with the function of removing fats, oils and grease from wastewaters before such wastewaters are discharged to city sewers.
   GREASE TRAP SLUDGE. The solid, lighter than water fraction of wastewaters from the handling, processing, preparation, cooking or consumption of food that are discharged to a pretreatment unit or device commonly referred to as a grease trap. The principal components of grease trap sludge are fats, oils and grease.
   PROHIBITED CONCENTRATION. Discharges of wastewaters from a grease trap in the city shall not exceed 250 mg/L (total) of fats, oils and grease in any sample, whether obtained as a composite or grab sample.
