§ 51.29 HOTELS AND RESTAURANTS.
   (A)   All hotels, restaurants, boarding houses and public eating places, before draining into the sewage system, shall install grease interceptors on fixtures as required by the borough or the City of York.
   (B)   The greases, oils and solid materials that accumulate in such interceptors shall be pumped or otherwise removed, and the interceptors shall be so maintained as to ensure the exclusion of the same from the sewage works. They shall be subject to regular inspection by the borough or the City of York. The contents of same shall be promptly disposed of after removal to the satisfaction of the borough or the City of York. On the notice by the general manager, any such establishment may be required to maintain for a period of three years all records related to maintenance of such interceptors and the removal of grease therefrom, and to make such records available to the general manager on request.
