(A) All new cooking establishments that require a grease interceptor to be installed shall be installed outdoors in accordance with this chapter and guidelines. Grease interceptors shall be adequately sized, based on the formula given in § 53.06, with no interceptor less than 1,000-gallon total capacity, unless otherwise approved by the Pretreatment/FOG Coordinator or the Utilities Director. New facilities that will need grease traps and not interceptors must have a trap adequately sized in accordance with the sizing guidelines in this chapter.
(B) No new food service establishments will be allowed to initiate operations until an adequate grease interceptor or grease trap is installed and approved by the city.
(C) Site plans must be submitted for all new food service establishments. Site plans must be signed and sealed by a state-licensed professional engineer to certify the plan meets all requirements of § 53.06.
(D) All grease interceptors, whether singular or two tanks series, must have each chamber directly accessible from the surface to provide means for servicing and maintaining the interceptor in working and operating condition.
