Sec. 20-3. Grease tank required where food is prepared.
   (a)    All restaurants and all other places where food is prepared, excluding residential units, served by the city sewer system, shall be required to have a grease tank of not less than one thousand (1,000) gallons' capacity, which shall be pumped out not less than once every two (2) months or a twenty-five (25) gallon/fifty (50) pound grease separator.
   (b)    The owner and/or occupant shall be required to keep accurate records on the dates the grease tank is pumped out or the grease separator is serviced.
   (c)    The public works director or his designee shall have the right during regular working hours (8:00 a.m. to 5:00 p.m., Monday through Friday) to inspect facilities for compliance with this section.
   (d)    The city council shall have the authority to waive the requirement for a grease tank or grease separator for bakeries or other similar establishments with carry out food only and discharging small amounts of grease to the city sewer system.
