Each restaurant shall be provided with a grease trap installed in strict compliance with the plumbing regulations of the village. Upon a written agreement not to do cooking, requiring an extensive washing of greasy equipment, pans, dishes or other utensils, the Health Officer may, in his discretion waive the requirement of this section relative to grease traps, the waiver to be conditional upon compliance with the aforesaid written agreement.
