This chapter sets forth the standards and requirements concerning the installation of grease interceptors for facilities which prepare or serve food, that may potentially discharge any solid or viscous pollutants into the POTW. The purpose of this chapter is to control the discharge of solid or viscous pollutants in amounts which will cause obstruction to the flow in the POTW resulting in interference (see C.F.R. § 403.5(b)(3)). A violation of this chapter does not require a criminal mental state nor is ignorance an excuse.
