(a) A minimum of 40 foot candles of lighting is required on all food preparation and utensil washing areas.
(b) A minimum of 40 foot candles of lighting is required on bar sinks, mix stations and etc., provided, when in the opinion of the Health Commissioner, light over bar sinks, etc., may cause a hardship. Light intensity may be reduced to twenty foot candles.
(c) Lighting fixtures shall be shielded to eliminate the possibility of broken glass falling into food or food utensils.
