(A) All permitted food service establishments are required to install, operate and maintain an approved type and adequately sized grease interceptor necessary to maintain compliance with the objectives of this chapter. Grease interceptors shall be installed at the user’s expense. Grease interceptors may also be required in non-cooking or cold dairy and frozen foodstuffs establishments and other industrial or commercial establishments when they are deemed necessary by the Superintendent/licensed plant operator for the proper handling of liquid wastes containing grease. All grease interceptors must meet the requirements of the Uniform Plumbing Code.
(B) Any such facility in operation without such a grease trap on the date of original enactment of this section shall be required to install and use such a grease trap within 60 days of enactment.
