3-3-10: SANITARY REQUIREMENTS:
   A.   Premises: All premises used for the retail sale of alcoholic liquor, or for the storage of such liquor for such sale, shall be kept in a clean and sanitary condition and shall be provided with sanitary equipment as follows:
      1.   Hot and cold running water for the cleaning and washing of glassware and similar utensils; and, the trough wherein said glassware and utensils are cleaned and washed shall contain a nonharmful, humane chemical of sufficient potency to eliminate bacteria.
      2.   Sinks for kitchen use.
      3.   Not less than one lavatory and water closet for the use of each sex. (Village code § 7-21)
      4.   The wastewater from sinks, dishwashing machines, and all other fixtures likely to contain grease, located in any such establishment, shall before entering the sewer, go into an approved and separating catch basin or grease trap. In the event a grease trap is used in said establishment, it shall first be approved by the director of public health and safety. (Village code § 7-21; amd. Ord. O-7-10, 2-8-2010)
      5.   In addition to the foregoing requirements, the said establishment shall fully comply with all the ordinances of the village and statutes of the state of Illinois regulating the conditions of premises used for the storage or sale of food for human consumption. (Village code § 7-21)
   B.   Employees: It shall be unlawful to employ, in any premises used for the retail sale of alcoholic liquor, any person who is afflicted with, or who is a carrier of, any contagious, infectious or venereal disease; and it shall be unlawful for any person, who is afflicted with or a carrier of any such disease, to work in or about any premises or to engage in any way in the handling, preparation or distribution of such liquor.
