9-2-19: GREASE TRAPS; COMMERCIAL KITCHENS:
Effective September 15, 1981, all commercial kitchens shall be equipped with grease traps.
   (A)   Commercial kitchen means any kitchen where the food prepared or cooked is to be sold or provided to the public on a regular basis.
   (B)   Grease trap means an interceptor device designed and installed so as to separate and retain deleterious, hazardous, or undesirable matter, including but not limited to grease, from normal wastes and permits normal sewage of liquid wastes to discharge into the disposal terminal by gravity.
   (C)   All grease traps installed shall be subject to approval by the County Manager or County Engineer. (Ord. 1981-B, 4-9-81, eff. 5-1-81)
