8-203: HEALTH AUTHORITY DEFINED:
 
FOOD:
Any raw, cooked or processed edible substance, ice, beverage or ingredient used or intended for use, or for sale in whole or in part, for human consumption, or chewing gum.
FOOD EMPLOYEE:
Any person working in a food-service establishment who transports food or food containers, who engages in food preparation or service, or who comes in contact with any food utensils, equipment or food-contact surfaces.
FOOD SERVICE ESTABLISHMEN T:
Any food establishment where food or beverage is prepared for final consumption and sold at retail, or any operation that stores, prepares, packages, serves, vends food directly to the consumer either for on-premises or off-premises consumption- be it fixed, mobile, temporary or seasonal as further defined by Oklahoma State Department of Health. A food service establishment-bar shall be exempt from this requirement.
HEALTH DEPARTMENT:
The Oklahoma State Department of Health or the State Commissioner of Health, or authorized agent.
RESTAURANT:
Any "restaurant" within the meaning of this chapter shall be defined as a restaurant, coffee shop, cafeteria, short order cafe, luncheonette, tavern, sandwich stand, food trailer, soda fountain, and all other establishments as well as kitchens in which food and drink are prepared for sale elsewhere to the public.(1985 Code; amd.
