8-2-11: INTERCEPTORS, SEPARATORS AND GREASE TRAPS REQUIRED:
   A.   1. Grease traps shall be required to prevent the discharge of oil, grease, sand and other substances harmful or hazardous to the building drainage system, the public sewer or the sewage treatment plant or processes. Each and every restaurant, hotel, boarding house, food service establishment and similar grease producing business or use located within a building existing on the effective date hereof shall, in the waste line leading from sinks, dishwashers and other fixtures or equipment where grease may be introduced into the sewerage system, install and properly maintain applicable interceptors, separators and grease traps to remove oil, grease, sand and other substances harmful or hazardous to the building drainage system, the public sewer or the sewage treatment plant or processes prior to hooking into the sewer system in accordance with the Plumbing Code, including future amendments and editions. A food service establishment shall mean any room, building or structure used or intended for use or operated for the preparation, manufacturing, and cooking of food for sale including, but not limited to, restaurants, cafes, cafeterias, bakeries, or similar places, and excluding therefrom private clubs and fraternal and church organizations which do not serve or prepare meals more than once a week.
      2.   Under the Plumbing Code, each dishwasher shall be calculated as one fixture, and the first kitchen sink shall be calculated as one fixture, and each sink thereafter where grease may be introduced into the sewerage system shall be calculated as one fixture. Installation of each grease trap or interceptor shall be inspected and approved by the authorized representative of the City prior to connection of same to the Municipal sewerage system.
      3.   A grease trap is not required for individual dwelling units or for any private living quarters.
   B.   Interceptors and separators shall be provided to prevent the discharge of oil, grease, sand and other substances harmful or hazardous to the building drainage system, the public sewer, or the sewage treatment plant or processes. Oil and sand interceptors or other necessary removal facilities shall be installed in each and every service station, automobile repair garage and similar business, use or premises when, in the opinion of the Sewer Superintendent, the same are necessary for the proper handling of liquid wastes containing high concentrations of blood, fruit, vegetable, or grain liquors, milk wastes, flammable wastes, oil, sand, or other harmful ingredients. All interceptors or removal facilities shall be of a type and capacity approved by the Sewer Superintendent and shall be located to be readily and easily accessible for cleaning and inspection, and shall be installed and maintained in accordance with the Plumbing Code, including future amendments and editions. Where installed, all grease, oil and sand interceptors shall be maintained by the owner and/or occupant, at his expense, in continuously efficient operation at all times. (Ord. 2010-07, 9-23-2010)
